This is one of Kealohi Naipo's favorite recipes. It's so easy and customizable to your preferences. Try it as is or substitute kalo for ‘ulu, or ‘uala, or mixture of all three!

Ingredients

  • 1 pound chicken thighs (cubed)
  • 6 cups of water
  • 1 tsp salt (add more to taste if needed)
  • 1 pound bag frozen lu’au leaves ✅
  • (1) 13.5oz can coconut milk
  • 2 cups kalo (cubed) ✅
    • optional to add more aromatics like ginger and garlic

Directions

  1. Cut up chicken thighs, then add to pot with water and salt. Bring to a boil, then reduce to simmer and cook for 20 minutes.
  2. Add frozen lu’au leaves, coconut milk, and cooked kalo. Simmer for 10 minutes or until kalo is warmed throughout.
  3. Optional to add more salt to taste. Option to serve with WIC approved brown rice!
