These omelettes are the best! This recipe is the perfect amount of breakfast for a family of five with young keikis. We love shrimp around here, but if anyone has shellfish allergies, simply make sure to omit the shrimp.

Ingredients

  • 1/2 cup tomatoes (diced) ✅
  • 1/2 cup onion (diced) ✅
  • 6 pieces of shrimp (peeled)
  • 6 eggs ✅
  • garlic salt and pepper to taste
  • 2 Tbsp butter
  • 3/4 cup cooked lu’au leaves ✅
  • 1/2 cup shredded cheese ✅

Directions

  1. Dice the tomatoes, onion, and shrimp, and set aside.
  2. Whisk eggs in a bowl and season with garlic salt and pepper to your liking.
  3. Heat butter in a frying pan and pour in eggs. Add in tomatoes, onion, shrimp. and lu’au leaves. Spread evenly.
  4. When the egg has begun to cook on the bottom, flip over and continue cooking, until everything is cooked through.
  5. Serve on a plate and sprinkle with cheese. Enjoy!
