This recipe is great for families with young keiki because its easy, nutritious and delicious. Poi is an ingredient that boosts the nutrient content with potassium and fiber, both great for heart health.

Ingredients

  • 1/2 cup ripe banana (smashed) ✅
  • 1/2 cup smooth poi ✅
  • 1 tsp vanilla
  • 1 egg ✅
  • 1 stick butter (softened)
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Directions

  1. Preheat the oven to 350F.
  2. Peel and smash ripe bananas.
  3. Mix together bananas, poi, vanilla, egg, and butter.
  4. Next add white and brown sugar.
  5. In a separate bowl, mix dry ingredients (flour, baking soda, salt, cinnamon)
  6. Add dry ingredients to the wet ingredients. Mix together.
  7. Put mixture into a well-greased loaf pan. Bake in the oven for 45 minutes or until done (use a toothpick to check.)
  8. Let it cool for 10 minutes then serve.
