‘Ulu is a great cultural food that you can eat it as is or add it as a nutritional boost to dishes like this meatloaf. This recipe is so versatile.
Ingredients
- 1/2 med onion (chopped) ✅
- 1 tsp butter (or olive oil)
- 2 pounds ground beef
- 1 tsp ketchup
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups chopped ʻulu (cooked) ✅
- 2 eggs ✅
- 3/4 cup skim milk ✅
Optional sauce:
- 1/2 cup ketchup
- 2 Tbsp brown sugar
Directions
- Preheat the oven to 350F. Line a baking pan with foil.
- In a small pan, cook onions with butter until tender. Let cool completely.
- In a bowl add: ground beef, cooked onions, ketchup and seasonings. Mix together.
- Chop up cooked ‘ulu. Add to mixture along with eggs and milk. Let sit for 5 min.
- Form a loaf on the baking pan and bake for 40 minutes.
- Remove meatloaf from the oven, top with sauce, then return to cook for another 10 minutes or until meatloaf reaches an internal temperature of 160F.
